SCO

Morning comfort comes for me in the form of 3 simple words: Steel Cut Oats.
The nutty texture officially trumps the rolled oats, not to mention the fact that they contain an extra bran layer, because they have not been steamed or rolled. Which also makes them a Raw food (until you cook them yourself).
Peaches n' SCO recipe
Ingredients:
1/4 cup SCO
3/4 cup water
1/2-3/4 fresh peach, chunked
1/4 cup soy or other milk (soy makes it extra creamy)
2 Tbsp sliced almonds
Cinnamon, to taste


Instructions:
Bring water to a boil, stir in oats, cover and simmer until desired consistency (I've never actually timed this. I just keep a close eye, stirring occasionally to prevent burning, until the water is absorbed. Possibly 7-10 minutes?).
Combine in a bowl with peaches, almonds, milk, and cinnamon. Stir and enjoy!
