Typically, Lake Powell food = cereal, granola bars, and the occasional hamburger. When I went a couple weeks ago with my awesome employers, it was a different story. We had so much delicious food. My favorite meal was a Thai dish from Shannon's sister-in-law, Fatima.
3-4 servings
Ingredients:
2 large chicken breasts
1 bottle Trader Joe's Red Thai Curry Sauce
1 red bell pepper
1 yellow bell pepper
2 cups sliced mushrooms
1/2 medium white onion
2 Tbsp Olive Oil
Salt and Pepper, to taste
Instructions:
1. Cut chicken into 1-inch chunks and combine with curry sauce in sauce pan. Cover and cook on Medium, stirring occasionally, until chicken is cooked throughout.
Alternative method: combine in crock pot and cook on low for 3-4 hours or high for 1-2 hours.
2. While chicken cooks, heat large skillet over medium-high, add oil, and add veggies once the oil is hot. Saute and stir occasionally until tender.
3. Top chicken and lots of good sauce with veggies. Serve with rice, couscous, quinoa, pita and hummus, or by itself!
If you can't make it to Trader Joe's, that's too bad... haha just kidding. I've tried the Thai Kitchen brand and it's no good. Look for a sauce with the first 4 ingredients pretty similar to Water, Coconut Milk, Red Chili, and Garlic. Stay away from too much sugar in the sauce, because than it's too sweet and not spicy enough. Kikkoman or Patak's might work well. Let me know what you like!
