After I decided that I really love the cold oatmeal from Overnight Oatmeal, I decided to try a Steel Cut Oats version. Now, these oats can't absorb liquid as well as the rolled oats, so I decided to cook them up the night before and chill them with yogurt overnight.
Ingredients
Cooked Steel Cut Oatmeal
1/2-1 cup plain greek yogurt
1 packet Truvia
Fresh Fruit
Other toppings (nuts, spices, sugars, sauces, anything!)
Milk (optional)
Overnight Instructions:
Cook your SCO using this RECIPE
Combine Truvia and Yogurt. Mix well.
Place cooked oats and yogurt side by side, on top of each other, or mixed in a bowl
Cover with plastic wrap and place in fridge overnight
Morning Instructions:
Sometimes I add a little milk to loosen up the oatmeal and mix all together.
Sometimes I leave everything separate and leave out the milk.
Add fruit and toppings.
You'll be full forever! Yum!
