Veggie and Feta Eggies

I always seem to make this meal when I've had a really long day and I need something warm and comforting before bed. It's a great way to get a kick out of eating eggs!


Veggie and Feta Eggies
Ingredients:
1 egg + 2 egg whites (I like cage-free large eggs)
1 teaspoon Olive Oil
Sea salt and pepper
2 tablespoons red or white onion
2-3 cups spinach (the more the better. spinach wilts to almost nothing when cooked. personal preference.)
1/8 cup crumbled Feta cheese
Fresh Salsa


Kid-Friendly Ingredients:
G3 is 2 years old and loves this!!
1-2 eggs
1 teaspoon Olive Oil
Sea salt
1 cup spinach
1/8 cup Mild Cheddar Cheese


Instructions:
1. Heat non-stick pan to medium-high. Mix egg and egg whites while waiting for pan to heat
2. When hot, add Olive Oil.
3. Cook onions in hot oil until almost translucent.
4. Add spinach and lightly stir until slightly wilted.
5. Pour egg mixture onto pan to combine with veggies and sprinkle with S&P.
6. Scramble those Eggies!
7. Take pan off heat and sprinkle with feta.
8. Serve with salsa.


This is great with the Avocado toast! So easy and simply deeeelicious!
