Silly Salads

Grilled Chicken Salad with Sweet Potato Fries


Salad
Shredded Chicken (I always have grilled chicken in the refrigerator for quick, healthy dinners. These are tenderloins seasoned with Montreal Chicken Seasoning)
Mixed Greens
Sliced Veggies (tomatoes, avocado, purple onion, cucumber, banana pepper rings, etc.)
Feta Cheese
Fresh Ground Black Pepper
Balsamic Vinegar and Olive Oil Drizzle
*Pile it all up and devour :)


Sweet Potato Fries
1 medium sweet potato
Sea Salt
Fresh Ground Black Pepper
Olive Oil


Preheat oven to 425 degrees. Place a piece of foil onto cookie sheet (easy clean-up). Spray foil with cooking spray. Slice sweet potato into finger size pieces. Put into bowl or zip-loc baggie. Drizzle with Olive Oil, sprinkle with Salt and Pepper. Toss with hands or shake bag to coat each piece and spread onto foil.
I don't know how long I bake them for to be honest... Just until I can stab a fork into them and they start to brown. Maybe 20-30 minutes? Try it out and let me know how long it takes your oven to bake these beauties!


Salmon Married Mustard Salad with Grilled Corn
One of my favorite ways to dress up those Omega-3's!


Salad
1 Trident Seafoods Wild Alaskan Salmon Burger (Costco)
Spinach, tomatoes, red onion, and avocado


Dressing
3 Tbsp dijon mustard
1/4 cup lemon juice
1-2 Tbsp Olive Oil (can omit if you want)
Salt
Pepper


Place FROZEN (that's right, straight from the freezer!) salmon burger onto grill. Grill each side 4-5 minutes. Cut into bite size pieces, toss with veggies and dressing, and wallah!


Grilled Corn
Pull down outer husks to the base of the ear. Remove the silk and fold up outer husks. Place entire cob into large bowl of cold, salted water for 10 minutes. Remove and shake off excess water, place on the grill and cover. Grill for 15-20 minutes, turn every 4-5 minutes. You should be able to stick a fork into kernels to know it's done. Remove kernels and serve with anything: butter, salt, pepper, lime butter, chili lime butter, garlic.. the possibilities are endless.
